Food is Good: Vegan Chicken Salad
Today was a Book Club Beach Day! My neighborhood book club came to my house in Margate and we did our book club meeting sitting under an umbrella on the sand. It was wonderful. I was in charge of lunch so I decided to make sandwiches, cut up fruit, and peach cobbler for dessert. Truly yummy!! For sandwiches I made eggless egg salad and vegan chicken salad. Both were delicious and a hit, so here is my recipe for vegan chicken salad sandwiches:
Marinate 2 tubs of seitan in olive oil, 1 tsp. sea salt, pepper, and chili powder.
In a grill pan, saute the seitan until almost crisp.
Then chop the seitan into smaller pieces resembling chopped chicken.
Add about 2 Tbsp. vegan mayonnaise, chopped cucumbers, chopped red onion, and paprika and mix well.
Put the salad on toasted whole wheat bread with a slice of tomato and cucumber.
Put the bread slices together, slice and voila! a vegan chicken salad sandwich perfect for a picnic!
