Food is Good, Easy Veg Gluten Free Quiche
My son, JJ, has come up with a recipe for a delicious vegetarian gluten free quiche. This is a great dish to serve at a spring luncheon with a salad and a glass of wine. Check it out:
Simply stir together:
1/2 bunch fresh spinach
sliced shitake mushrooms
1 bag shredded mozzarella cheese
2 eggs
1/4 cup milk
Salt and pepper
Pour into a pie pan and bake at 350 for 45 minutes.
