Food is Good: Eggless Quiche
Ok, I know it sounds like an oxymoron to have a quiche without eggs. I am trying to live creatively and stretch the limits of cooking! I would like to have less eggs and cheese in my diet, so I thought I would try to whip up a spinach quiche with vegan ingredients.
So here is how I did it:
1. Bake a store bought pie shell at 425 for about 12 minutes.
2. Soak about a cup of raw cashews in water all afternoon.
3. Drain water from cashews and blend with about 1/4 c. new water and 2 Tbsp. tamari sauce in the food processor for approximately 10 minutes until creamy.
4. Add 1 block extra firm tofu and several shakes of pepper and process until blended.
5. Meanwhile, saute several vegetables: spinach, onions, garlic, tomatoes, and mushrooms.
6. Stir in the vegetables to the tofu mixture and pour into the baked pie shell.
7. Sprinkle with whole wheat breadcrumbs.
8. Bake at 350 for 45 minutes.
9. Let cool and serve!
