Food is Good, Hot Spicy Black Bean

It has been incredibly hot and humid here in the mid Atlantic region. This tropical feel gave me a yen for Hot and Spicy Black Bean Soup. It is an easy soup to make, you just need enough time.
I always buy my beans dry and cook them myself, much healthier, less sodium, and much cheaper than canned beans. So, to make the soup, soak a large bag of beans over night. You will notice they increase in size, but will still be hard.

Now, for cooking the soup. Dice 2 cloves of garlic, 1 tomato, and 1/2 red onion and saute in 1 Tbsp. of olive oil in large soup pot. Then add the rinsed black beans and cover with 2 cups vegetarian chicken stock and water. Spice it with a cajun spice blend, red pepper flakes and some black pepper. After it cooks, oh about 3 hours, puree a bit just to get a little of a congealed texture. Serve hot with a dollop of sour cream. Bon appetit!
