Food is Good: Mom’s Comfort Food

My elderly mother is very sick and I have been out to visit her in the hospital. It is always a topsy turvy feeling to be in the position to take care of your mother when most of your life she takes care of you. Since my Mondays are my recipe days, I decided today to include probably my mother’s ultimate comfort food recipe from my childhood: Oatmeal Chocolate Chip Cookies.
We made cookies a lot in my house, especially in the winter and often during the holiday season. But the old stand by anytime of year, was chewy, soft, dunkable, chocolate cookies, and here is our recipe, still good after many, many years!!

Mix the following dry ingredients in a separate bowl:
1 1/2 c. flour
1 Tsp. soda
3/4 tsp. salt
Mix in big bowl:
1 c. margarine or butter
2/3 c. sugar
2/3 c. brown sugar
1 tsp. vanilla
1/2 tsp. water
After this wet mixture is combined, add 2 eggs and mix again.
Then add dry ingredients from smaller bowl, 2 c. oatmeal, and 1 12 oz. pkg. chocolate chips.

Drop by spoonfuls on greased cookie sheets and bake at 375 for 10-12 minutes. Let cool after baking, then enjoy with a glass of cold milk or a cup of tea and remember your mom.
