Food is Good, Quinoa Balls and Spaghetti

Who doesn’t like spaghetti and meatballs? But the real thing can be high in calories, heavy, salty and low in vitamins. My son JJ came up with a very healthy spaghetti and meatball dish, light, high in fiber, nutrients, and taste. Check this out:

Cut two spaghetti squash in half the long way and cover with oil, salt and
pepper. Pop in the oven at 400 until fork tender 20-30 mins. Take out
of the oven and let cool.Use fork to carve out meat, side to side, not up and
down.

Make Israeli salad: 3 vine tomatoes
half of yellow onion
one cucumber.
Dice all vegetables and add two tablespoons of vinegar, two table spoons of olive oil,
pepper and salt.

Prepare Quinoa Balls: Saute 4 large carrots, one cup of shitake mushrooms, and half
of a yellow onion in olive oil with added salt and pepper. Let cool, then put into food
processor and quickly process. Cook one cup of quinoa, (follow recipe on back of box). Add
quinoa to stir fry, as well as one egg, and one cup of bread crumbs. Form balls and let sit
in the fridge for 20 minutes. Cover with flour then fry in pan.

Toss altogether as in picture below and you will have a healthy alternative to the traditional spaghetti and meat balls!
