Food is Good, Strawberry Crisp
This week I am handing this post to my husband and best friend, Frank to talk about his famous dessert, Strawberry Crisp.
My preference is for simple recipes with relatively few ingredients. Ideally, the natural flavor of the ingredients will dominate the end result. Here is a recipe for a dessert that celebrates the fresh fruits of the summer season. Use whatever fruit or combinations of fruits that are fresh at the farm stand. For the last several weeks, I have used strawberries and also threw in a handful of blackberries as well. I generally do not measure ingredients, which is something I do not necessarily recommend.
Wash the strawberries well and cut into slices or chunks.
Line the bottom of a baking dish with the freshly cut fruit, say about halfway to the top of the dish.
In a mixing bowl, combine several handfuls of oatmeal, maybe one handful of flour and a nice bunch of brown sugar.
Melt one tablespoon of Earth Balance, or more if you like. Add to dry ingredients.
Add a bit of warm water to the bowl and mix up. Add more water until the brown sugar dissolves and everything combines nicely.
Add some cinnamon and a couple handfuls of chopped walnuts.
Spoon mixture over the fruit and spread. Sprinkle some more walnuts over the top.
Bake at 375 for about 30 minutes.
Let cool and enjoy.
For some people, the topping is a bit dense, especially if you use whole wheat flour. If you have some left over the next morning, it is very moist and great for breakfast.
Yum, enjoy, I can tell you from experience, it doesn’t last long because it is so tasty, everyone gobbles it up!!
