Food is Good, Veg Recipe for a March Day
Oh, it is a dreary March day in the neighborhood. It could not be a better day to make a big batch of comfort food, Lentil Soup! Soup of the peasants, earthy, hearty, inexpensive, been round for thousands of years. Guess it must be a pretty good soup if we are still making it.
Here is the recipe I have been making for over 20 years:
soak bag of lentils for a few hours
Rinse lentils in colander, then place in soup pot with enough water to cover an inch over. bring to boil and cook for about 1/2 hour.
Add peeled and cut up potato, sliced carrots, chopped onions, 2 minced garlic cloves, and 1 can chopped tomatoes. Add pepper to taste and water if necessary. Bring to boil, then simmer covered for a couple of hours until the lentils are soft and everything converges into a tasty concoction. You may need to add water periodically, and stir every 20 min. or so, so it doesn’t burn or stick to the bottom of the pan.
Serve with crusty bread and sliced cheddar cheese. Yum, can’t wait for dinner (and spring!).
