I need comfort food, vegetarian style
Wow, it has been a long, cold winter here in the mid Atlantic. Weather is a big conversation piece everywhere you go because the snow & cold just doesn’t go away.
I do love the cozy atmosphere inside looking out. Making and arranging my environment so that it feels warm and comfortable inside.
So many ways to make one feel snug, and a big one is food. Often people think only meat based dishes can make comfort food. The kind of food that sticks to your ribs, makes you feel full, warm, and taken care of.
I have found that thick hearty soups make wonderful comfort food, & they can be made with just veggies. Basically just saute in some olive oil your basic starting vegetables: onions, garlic, zucchini, yellow squash, and then add whatever bigger vegetables you want such as sweet potatoes, turnips, parsnips, yellow beets, cauliflower, potatoes, and so on. Then salt , pepper, paprika, and whatever other spices you like can be added. I only use peppers if I want that spicy flavor and often I puree the soup before serving.
The meal will be even happier with the soup served in a beautiful tureen made from hand made pottery! The problem with comfort food, is that you always feel sleepy after.
